Shoofly Pie
Ingredients
Bottom Part
- 1 cup brown sugar
- 1 egg
- 1 cup molasses
- 1/2 tsp baking soda
- 1/2 cup boiling water
- 1/2 cup cold water
Crumbs
- 240g flour (~2 cups)
- 100g brown sugar (~1/2 cup)
- 1/2 tsp baking powder
- 103g shortening (~1/2 cup)
Other
- 1 unbaked 9-inch pie shell
Instructions
- Begin with the bottom part by stirring the egg into 1 cup brown sugar. Add the molasses. Dissolve the baking soda in the boiling water. Add the cold water, then combine with the egg mixture. Pour into an unbaked 9-inch pie shell.
- To make the crumbs, cut the flour, brown sugar, baking powder and shortening together until crumbly. Sprinkle on top of the bottom part.
- Bake at 350 degrees for 15 minutes. Reduce heat to 325 degrees and bake 50 minutes longer, or until done.
